Our Wines
Astrum
The Astrum label represents the highest expression of the Malbec grape. Ours is a single-varietal, single-vineyard wine, made from ultra-premium grapes that have been harvested by hand, fermented in small batches, and aged in new French oak for 16 months or more, followed by further aging in bottle. In select years, we will perform a barrel fermentation, in which the barrel itself is used as the fermentation vessel, giving a stronger oak integration. Once the fermentation is complete, the wine is transferred to a second new French oak barrel for aging.
In very exceptional years, we may cede the stage to Petit Verdot, releasing a special single-varietal Astrum bottling of the grape instead of Malbec.
Baritone
Whereas Astrum is named for the stars, the Baritone is inspired by music. In this wine, we seek to create to elevated blends of our vineyards grape varieties: Malbec, Cabernet Franc, and Petit Verdot. These blends are carefully orchestrated under the guidance of our magnificent winemaker, Pablo Martorell. When the climatic conditions favor a coordinated ripening of all three grape varieties, we will co-ferment all three together, achieving a rare blended expression.
And just as any opera has arias, so too does the Baritone occasionally come in single-varietal expressions. In select years, we may release a single-varietal Cabernet Franc or Petit Verdot bottles under the Baritone label.
